For 2013’s first Tasty Tuesday, we’re sticking to a liquid diet. No, this one doesn’t have anything to do with healthy resolutions. This is an homage to the libation that kept us feeling festive throughout our time in Sayulita!

Based on a traditional Mexican drink, this sweet-tart, freshing treat does pack a punch of good stuff – fresh juice, lower cal liquors. But let’s be real, a cocktail is a cocktail and is meant to be enjoyed accordingly!

We did take liberties with our recipe from day to day, playing with a dash of mango juice here, a splash of pineapple there and tested the original tequila based version too.

But when it was all said and done, we settled on the recipe below as our new go-to drink. It’s guaranteed to bring a little sunshine to your gloomiest of days. No beach required!

The Apartment 34 Paloma (adapted from Bon Appetit)

2 shots gin (I’m a Hendricks girl myself, but Bombay tasted nice on the beach!)

1/4 C fresh squeezed grapefruit juice

1/2 fresh lime

1 t sugar

1/4 C club soda

Pour some kosher salt on a plate. Rub half of rim of a highball glass with a grapefruit wedge; dip rim of glass in salt. Combine 1/4 cup fresh grapefruit juice, fresh lime juice, and sugar in glass; stir until sugar is dissolved. Stir in gin, add ice, and top off with 1/4 cup club soda. Garnish with grapefruit wedge. And toss some lime wedges in for color, because why not!

Final step: sit back and enjoy!!
