The lights on the tree are twinkling, the heater is warming up the place and the wine is poured. Sounds like the perfect evening for a hearty and comforting bowl of soup! I’m obsessed with making a big batch of soup– it’s one of the easiest things to make. You throw all of your ingredients into a pot and just let that baby simmer. Freeze half for later and you have yummy soup at the ready all holiday-season long!

I love taking advantage of seasonal squashes too- pumpkin and butternut sure do make for some heartwarming soup, but I rarely venture past my go-to basics. However, after the team surprised me upon my return from Australia with a fridge full of goodies {including a bowl of this rockin’ Bourbon Sweet Potato Bisque with Brown Butter Cinnamon croutons!} I’m feeling my soup game is rather under par. These recipes have me craving to learn more!

I have a thing for mushrooms, Chantrelles to be exact, and this bowl ‘a chowda looks to be the perfect chunky soup to warm your belly. Ingredients for Chantrelle Chowder with Bacon and Corn are being added to the grocery list as we speak. I can’t wait to bite into the earthiness of the chantrelles, the sweetness of the corn and the brightness of the dill!

I’ve never tried my hand at cauliflower soup but if there is anybody who knows a thing or two about cooking a healthy and delicious meal, it’s Sarah. And this Roasted Garlic Cauliflower Soup with Pesto sounds as simple and yummy as it looks!

It just wouldn’t be right to not attempt to perfect a pumpkin soup. Mine seem to always come out a bit bland. Apparently the trick is to add cheese and lots of it! This Pumpkin Cheesy Soup with sharp cheddar cheese and toasted pumpkin seeds doesn’t sound as healthy as the last recipe but hell, it is the holidays afterall!

Finally, a prettier soup I never did see, somebody serve me up this Broccoli and Pistachio Soup please! With a brocolli floret and purple and green pistachios on top, present this at your holiday dinner and people will have a hard time believing Wolfgang wasn’t in the kitchen with you!

What’s your go-to winter soup recipe?? I’d love to add even more to my repotoire! Here’s to surviving the holiday season.
