Toast is a food trend we just can’t quit. And why do we have to when we keep coming up with a million ways to make it dee-licious? Our latest experiment was inspired by all of the gorgeous baskets of berries at the weekend farmer’s market. Blueberries, blackberries, boysenberries – they’re all plump and juicy and the perfect ripeness to make something sweet to eat. This Balsamic Berry with Goat Cheese Toast gives you a the perfect combo of tartness + creaminess. With warm berries oozing down the sides, we’re berry certain you’ll pucker for more than one slice! Fair warning: you may become addicted.
Macerated Balsamic Berry + Goat Cheese Toast
1/2 cup sliced strawberries
1/2 cup blueberries
1/4 cup blackberries
2 T sugar
1/2 cup balsamic vinegar
1 package goat cheese
your favorite crusty bread toasted
mint for garnish
Throw all ingredients in saucepan and slowly stir over medium-low heat. When sugar starts to bubble, gently mash berries to release some juice. Continue to stir for about 5 minutes until the liquid thickens into a syrup. Spread goat cheese on toast and spoon warm berry mixture over top. Garnish with chopped mint. Eat for breakfast, a sweet afternoon pick-me-up or even for a light dessert!
Whoops. We ate it all. Guess we just have to toast another slice!
