Despite the fact that we really do love our alcohol cocktails around here, some days we just want to sip on something that is refreshing and quenches our thirst without leaving the effects of booze on the brain and body. Okay, that rarely happens, but let’s say you’re having a kick-off to summer during the middle of a hot afternoon? Or you have to get back to work after your lunch break? Or it’s the day after Cinco De Mayo….you need to have a good virgin drink in your entertaining arsenal.

This Pineapple Mint Agua Fresca is so good, it doesn’t even matter that it’s not spiked. Really, it’s that delicious!

Pineapple Mint Agua Fresca 

1/2 cup fresh pineapple
3/4 cup water
1/2 oz lime juice
2 tablespoons sugar
2 mint leaves

Blend the sugar water and lime juice in blender. Add the pineapple and mint leaf and blend. Add more water for desired consistency. Pour through a fine mesh strainer to remove pineapple pulp into a glass.

For the ice cubes, cut a slice of cucumber or mint leaf and put in tray with water. Freeze for at least 3 hours. But our favorite? Coconut milk ice cubes!

  2. Thanks for sharing Agua Fresca looks refreshing and so simple. I never like drinking juice always preferred the fruit but making your own juice is always a treat. I also replace the pineapple with watermelon when in season. Happy Nesting.
